Rooting is a way of using your android phone to its full potential. It gives you full control on every aspect of your decide even at kernel level. You can do some basic stuff like customising your phone and advance stuff like controlling your CPU cores to run at specific frequency etc
DISCLAIMER : TO ROOT YOUR PHONE YOU WILL NEED TO UNLOCK YOUR BOOTLOADER WHICH NOT ONLY DELETES ALL YOUR DATA BUT VOIDS YOUR WARRANTY. I AM NOT RESPONSIBLE FOR ANY DAMAGE CAUSED TO YOUR DEVICE. PROCEED AT YOUR OWN RISK
Here are my top 5 reasons to root a phone (there is more advance stuff than this is what makes a great difference in user experience)
1. Greenify
This one is my favourite root app. The first app every root user must have. This app alone is the reason to root your phone.
This app allows you to hibernate apps running in background which saves not only your battery but also data (useful when you just want to use one app and don't want other apps to use your data)

2. Kernel manager.
This is where you feel like you truly control your device. You can install from many of the kernel managers from playstore. These allow you to tweak your CPU & GPU clock speed. Also calibrate display temperature.

3. Xposed installer
Android allows customisation out of the box. But many users feel that they need something else to personalise your phone. And add/enhance some features. That's where xposed framework comes in (note: in newer versions, you need to set selinux mode to enforcing for xposed to work). There are tons of xposed modules. If you're new start with gravity box.

4. Change DPI
This is the first thing i do after i root my phone. You can do this by changing values of build.prop or use an app named build prop editor. I use 400dpi instead of default 480. It makes objects much smaller and allows more information to be displayed at the screen. And it looks nice.

5. Uninstall bloatware
Phones come with preloaded OEM skins. Nexus phones have least. Samsung has most. Most of the times they are useless and they take up too much space on phone and keep running in background when you won't even use them. Worst thing is that you can't uninstall them. But if root your phone you can not only browse system files but also uninstall system apps using es explorer. Or you can use dedicated apps for it.

Bonus 6th - viper4android
I am not an audiophile but i do like good sound. But can't if you have shitty pair of headphones. You can use Poweramp to tweak your audio that was my first choice but unfortunately i can't buy the app because many Indian debit cards don't support international transactions. So i opted for viper4android. It gives you full control of your sound.

There are many things you can do with too like installing custom ROMs. And many other network tools. But these are my basic reasons anyone can root.
